These are golden beets and the first time I purchased them. They are way less messy than the infamous deep red beets which I love. I like to bake them in tin foil like a baked potato. They can then be added to salads or I just eat them with rice vinegar and olive oil. This painting was juried into the American Impressionist Society Online Exhibition 2021.
